GREEN TEA AND HOW ITS DIFFERENT FROM OTHER TEAS
Green Tea leaves is characterised by its production process.
The tea leaves are harvested from the Camellia sinensis plant and then quickly heated and dried. Unlike Oolong and Red tea, the tea leaves are not left to allow for oxidation. This gives the Green tea the fresh taste and retains colour of the tea leaves which can range from light green,dark green to light yellow.
Brewing of Green Tea
Because of the production process, Green Tea leaves are more delicate.
Care must be taken not to soak the tea leaves for too long for too high temperatures, as too much heat can scorch the tea leaves, making it excessively bitter and astringent.
As a guide, Green tea leaves should steep only for 30 seconds for first brew and add 30 seconds for each subsequent brew. Check the colour of the tea. Once it turns just slightly light green, its ready to be drunk!
Flavor Profile
Green tea has the lightest favour profiles among the all the other types of tea. Depending on varieties of green tea, flavour profiles range from grassy and nutty to vegetal, sweet and tangy. If brewed correctly, most green teas should be light green in color and only mildly astringent, with a pleasant after tast. Each variety of Green Tea should also display its character that is unique to its variety.

A good Green Tea will give pleasant and refreshing taste with some depths of flavor.
The better quality, the more flavour, and usually can be steeped multiple times.
First picking from Spring are considered to be the most delicate and the best picking.
